Here is the recipe for the Hawthorn Ketchup. I tripled the amount of Hawthorns and increased apples and tomatoes too, but this is the original recipe and you can play with it and make it your own. Before making it, it is necessary to destone the Hawthorn berries and to do that, I covered the berries with water and brought them to a boil, then simmered until they were soft enough to push through a sieve. The recipe is from a book I spoke about a few weeks ago – “Foraged Condiments” by Natasha Lloyd.
100g Hawthorn berries – destoned
1 onion
1 apple
5 tomatoes
30ml ACV
10g sugar
Salt to taste
I also added Garlic, Paprika and a pinch of Clove and a pinch of Nutmeg
This recipe was a little annoying as I didn’t know which size onion or tomatoes or apple and so I judged myself based on the extra amount of Hawthorn berries I used. I also added a handful of Blackberries.
After destoning the Hawthorn berries, sauté the onion and when it is translucent, add the apples and tomatoes, sugar, salt and vinegar and stir well. Stir until all well mixed together and then add the Hawthorn and Blackberry purée. Allow to cook, stirring now and again, until all the ingredients are soft and cooked through. Remove from the hob and using a stick blender, (or a food processor) blend until a smooth sauce and then put into the sterilised jars or bottles and label.
